Using a spoon, scoop out
seeds form both melons.

Cut in half, peel away skin
and thinly slice melon flesh.

Slice water chestnuts.

Arrange melon slices on
serving plates and top with sliced water chestnuts.

Mix together chopped ginger,
dry sherry and stem ginger with its syrup and spoon over melon and water
chestnuts.

Cover and chill for 30
minutes.

Sprinkle with melon seeds and
serve.
