In a deep pan, place pork pork, green onion, ginger. Add just enough water to
cover pork. Bring to boiling. Once boiling, reduce heat to medium
and cook for 20-25 minutes. Turn off heat and allow to cool.

Meanwhile, cut cucumber in halves then cut into thin slices lengthwise. Put
them in a bowl with ice water for 5-10 minutes then drain water well.

Mince garlic and mix with soy sauce, ginger, sugar, sesame oil. Remove
pork from pot and reserve the stock for making Shiitake soup. Place the pork on
top of the cucumber and pour sauce over them.
